Cowboy Caviar

Ingredients

  • 1 (15 oz) can black beans, rinsed and drained

  • 1 (15 oz) can black-eyed peas, rinsed and drained

  • 1½ cups sweet corn (fresh, frozen, or canned and drained)

  • 1 red bell pepper, fine chopped

  • 1 yellow bell pepper, finely chopped

  • ½ red onion, finely chopped

  • 1 jalapeño, seeded and finely minced (optional, for extra heat)

  • ½ cup fresh cilantro, chopped

  • Mesquite BBQ flavored Rose Sisters Chips, for serving

    Dressing

  • 1/3 cup rice wine or apple cider vinegar

  • 2-4 tbsp chili oil (optional, for extra heat)

  • 2 tbsp olive oil

  • 1 tbsp of honey

  • Season with salt and pepper to taste.

Instructions:

  1. Mix together the dressing ingredients in a large bowl, set aside.
     

  2. ​Prep your veggies and add to the bowl with the dressing ingredients. Mix well to coat and combine. Taste and season with salt & pepper as needed.
     

  3. Eat immediately or set aside for an hour to let the flavors meld for a bolder taste.
