
Cowboy Caviar
Ingredients

1 (15 oz) can black beans, rinsed and drained

1 (15 oz) can black-eyed peas, rinsed and drained

1½ cups sweet corn (fresh, frozen, or canned and drained)

1 red bell pepper, fine chopped
-
1 yellow bell pepper, finely chopped
-
½ red onion, finely chopped
-
1 jalapeño, seeded and finely minced (optional, for extra heat)
-
½ cup fresh cilantro, chopped
-
Mesquite BBQ flavored Rose Sisters Chips, for serving
Dressing -
1/3 cup rice wine or apple cider vinegar

2-4 tbsp chili oil (optional, for extra heat)

2 tbsp olive oil
-
1 tbsp of honey
-
Season with salt and pepper to taste.
Instructions:

Mix together the dressing ingredients in a large bowl, set aside.

​Prep your veggies and add to the bowl with the dressing ingredients. Mix well to coat and combine. Taste and season with salt & pepper as needed.

Eat immediately or set aside for an hour to let the flavors meld for a bolder taste.
