
Peach & Tomato Salsa
Ingredients

9 cups fresh peaches, chopped

2 tablespoons lime juice

4 cups fresh tomatoes, diced

2 large green bell peppers, diced

1 large red bell pepper, diced

2 cups sweet onions, minced

1/2 cup jarred jalapeño, diced

1/4 cup cilantro, roughly chopped

1 cup apple cider vinegar

3 garlic cloves, chopped

3 tablespoons honey (or agave)

1 tablespoon cayenne pepper (optional, adjust for spice level)
Instructions:

Peel, pit, and chop peaches, and mix with lime juice.

Peel and chop fresh tomatoes to measure about 4 cups.

Combine all fresh fruits and vegetables in a large stainless steel pot. Add vinegar, honey (or agave), garlic, cilantro, and cayenne (if using).

Bring mixture to boil over medium heat. Cook for 3 minutes, stirring frequently.

Add jalapeños, and cook for 3 more minutes. Continue frequent stirring.

Turn heat to low and let for 15 minutes.

After this step you can jar the salsa for preservation or ladle into a bowl, refrigerate for 2 hours and serve.
