Herb Marinated Goat Cheese

Ingredients

  • 1 cup olive oil

  • 4 large whole cloves garlic, halved

  • 2 whole bay leaves

  • 5 whole black peppercorns, crushed

  • 1 tsp. dried basil leaves

  • 1 tsp. dried oregano leaves

  • 1/2 tsp. crushed red pepper flakes

  • 6 pieces sun dried tomatoes, halved or slivered

  • 2 logs (4 oz each) goat cheese

  • Rose Sisters Chips

Instructions:

  1. In a small saucepan, gently heat the oil, garlic, herbs and seasonings until they just start to come to a to boil.
     

  2. Simmer over very low heat for 5 minutes being careful not to burn the garlic.
     

  3. Stir in the sun dried tomatoes and cool completely.
     

  4. Place the goat cheese in a flat container. Pour oil over the cheese.
     

  5. Cover and refrigerate for at least 4 hours.
     

  6. Serve with Rose Sisters Chips
